OF THE UDUMBANTHALA FOLK

Udumbanthala culinary tradition offers the taste buds a variety of delights ranging from the plain, wholesome PATHIL (Pan cake) to the bewilderingly sophisticated PANINEER PETTI (Rose box).

Udumbanthala womenfolk are uncrowned queens in the kitchen and they are capable of bringing out delights bordering on pure magic. It appears that hardly anyone can beat the Udumbanthala womenfolk in any kitchen Olympics.

PATHIL:

Every morning, the aroma of Pathil comes out of the kitchen of almost all the houses of the traditional Udumbanthala folk.

Pathil is to Udumbanthala folk what Chapathi is to the Punjabis or what Iddali is to the Brahmins.

Pathil is a thin pancake made of rice. Purists call it PATHIRI while the Udumbunthala folk still prefers the good old name PATHIL.

Originally, Pathil is made in a special way. Parboiled rice, soaked overnight in water, is ground on a stone into a fine, thick dough.

Small balls of the dough is hand-pressed into thin, flat, circular cakes. The cakes are roasted over high flame on a flat KALLU or stone. Only a thin coat of coconut oil is used to paint the stone.

Ideally, the Pathil on the hot oven will bulge and puff up. Adequately cooked Pathil will produce a unique, aroma which always drives the Udumbanthala folk into to a sort of ecstasy which they always relish--even when they are belly-full!

Fish curry, especially POYAMEEN CURRY (River fish), goes well with Pathil.

It is interesting to watch an Udumbanthala folk soaking bits of Pathil in Poyameen curry --voraciously gobbling them up!
